It's: Il est charpentier de métier. (not de son)

Il est médecin/professeur de formation.

I don't have to elaborate English sentences. You know better English than me.
How do you write the third and the fourth sentences in French?

Of course we could write the following:
Il est charpentier.
Il est médecin.
"You know better English than me"...? You were not saying this to me, were you? ^_^

As you said, you can just say:
Il est charpentier.
Il est médecin.

But also:
Il est charpentier de profession.
Il est médecin de profession.

Or:
Il exerce la profession de charpentier.
Il exerce la profession de médecin.
