My question is on the omission of the verb 'sont' in the first and second sentences.

Shouldn't it be 'Quels sont jours ... ?

The 3 sentences are correct (except the "s" in "jours" in the 2nd one, or maybe the missing "s" in "quel").

When you said "Quel jour.....?", it means "Durant quel jour.....?". That's why there's the "sont" in the last sentence. You wouldn't say: "Durant quels jours sont les jours de la fin de la semaine" (totally incorrect).

Note: you can also say, for 1. and 2. :
- Quels sont les jours où tu vas au cours ?
- Quel est le jour où tu fais les courses ?

What is the day you do the shopping?
Have I properly translated the French sentences into English?

[ The French word 'oú' means 'where' in English. However, it is odd to say 'days where' and 'day where' in English.]

You have translated them correctly.
"le jour où" means "the day when" even if it's "the day where" at first sight.
