I have never really understood how to integrate 'encore' into the sentence.  Where in the sentence does it go?  Does this depend on its meaning?

I'm trying to say 'there's not much left to do.'  So far I have 'Il n'y a pas beaucoup encore de choses à faire.'', although I am not sure if encore is the correct word to use...

I'm wondering if encore quite covers the meaning you're looking for.

In your sentence, a possible ordering would be Il n'y a pas encore beaucoup de choses à faire (you can also put encore before the pas or at the end of the sentence), but the interpretation would be something like "There's not a lot to do yet".

To say "there's not much left to do", then in French this would be e.g. Il ne reste plus grand chose à faire, combining ne ... plus ("no longer", "not any more") and Il reste... = ... is left.
