I am editing a manuscript, in English,  which includes the term i>bois brûlé >. It is spelled, accented and used correctly, however, sources I've checked include a hyphen. Should there be one?

Yes, there is a hyphen. Collins-Robert gives a hyphen, and so does this  http://www.thecanadianencyclopedia.com/index.cfm?PgNm=TCE&Param... I've never seen it without.
