New to the site, it is great so far. I just need some help expressing myself correctly.

I am trying to say:

It is an organization that sells local fruits and vegetables. This is great for this city because it is difficult to find fresh local fruits and vegetables. No one eats them anymore. This organization is trying to change all of that. They know all the farmers they buy from so they know where all the food comes from.

This is what I have, but I don't think it is correct:

Il est une organisation qui vend des fruits et des légumes locaux. C’est une bonne organisation pour cette ville parce que c’est difficile trouver des fruits et des légumes frais et locaux. Personne ne mange plus ces aliments. Cette organisation essaye changer cela. Ils connaissent les fermiers qu’ils achètent, donc ils connaissent d’où la cuisine vient.

C’est une organisation qui vend des fruits et des légumes régionaux.
C’est une bonne chose pour cette ville parce que c’est difficile trouver des fruits et des légumes frais et régionaux.
Plus personne ne mange ces aliments.
Cette organisation essaye de changer cela. Ils connaissent les fermiers chez qui ils achètent, donc ils savent d’où les aliments viennent.

Okay, why is there a de right there?

Think about a literal translation.

C'est difficile trouver = it's hard find (something is wrong here...)
C'est difficile de trouver = it's hard to find

I get very confused about when de means "to" and when to use prepositions in general. What are the instances that "to" is not implied in the infinitive verb?
