I am looking to transalate the following;

Aminata, la serveuse est une Sénégalais de Dakar.

Is this the correct spelling for Sénégalais considering that Aminata is feminine?

No, it should be Sénégalaise. And I'd like to see an additional comma after 'serveuse.'

actually you don't need the indefinite article because it is a bit pejorative in French but:
Aminata, la serveuse est Sénégalaise de Dakar.
