How is the word spelled in French, that is the word exclaimed a the beginning of a fencing dual.... that "sounds like" too-shay?

At the beginning of a fencing bout, the phrase is En garde! You're thinking of Touché! -- that's the cry when a hit is scored. It simply means touched.

Note that touché has been adopted in English to mark a metaphorical "hit" -- as when someone having an argument or discussion admits that the opposing point of view has scored a "point."
