how to compliment the chef

Can anyone tell me how to politely compliment a French chef? I know that compliments vary with culture, and I wanted to make sure of the correct way to express myself.
I'd like to be able to say "The meal/dish was absolutely delicious! Thank you."

Would there be a difference if you wanted to compliment a French host of a dinner party instead of a chef at a restaurant?
